I served this as an entree salad over lettuce for dinner. It was also great made into a wrap with lettuce for lunch. My husband is the patient here with late stage renal disease and not a great appetite. He loved this.

how can I lower the phosphorus content? Moderator comment: You could reduce the portion from 1 cup to 3/4 cup but 122 mg phosphorus with 16 grams of protein is not bad at all.

Chicken Salad

There is mayonnaise in these recipes and mayonnaise has salt and I cannot have salt. Why would you use something with salt in it even at the amount in this recipe? Moderator Note: You could use a low sodium mayonnaise instead or regular to further reduce the sodium. Since one portion is below 140 mg sodium it is still considered to be a low sodium dish with the regular mayonnaise.
