Good biscuits and easier than the other recipes. Next time I think that I will chill the shortening and use a food processor to mix the dry and wet ingredients. I also folded the dough and rolled it up a few times (6) for a layered biscuit.

I have not baked biscuits because of the baking power and baking soda, however, I found Ener-G baking powder and baking soda on Amazon. What are the values of potassium, aluminum and phosphates in the Ener-G products? Love your site. Thanks Dietitian comment: 1 teaspoon of Ener-G baking powder is free of sodium, potassium, phosphorus and aluminum; it has 600 mg calcium. The Ener-G baking soda is free of sodium, potassium and aluminum. It contains 800 mg calcium for 1 teaspoon. Both may be used in a kidney diet as long as there are no problems with high calcium or magnesium levels.

These turned out excellent! I didn't have any buttermilk, so I did a substitute by adding 3/4 tablespoons of white vinegar to a liquid measuring cup, and then pouring milk into it until it reached 3/4 of a cup. Then I simply added it into the recipe. The biscuits turned out hearty and soft! They're especially tasty with a little bit of butter and jam. Thank you very much!
