Helpful hints

  • These muffins are best for kidney patients who do not need a potassium restricted diet since the banana, peanut butter and chocolate are high in potassium.
  • If you use a reduced-fat peanut butter if will add approximately 5 grams of carbohydrate per serving.
  • This muffin is a good protein snack. Ask your dietitian if you need to add a phosphate binder if prescribed.

Bananna's are one of the biggest no-no's or any renal diet, I cannot believe I would find this recipe on here. Dietitian comment: Thanks for your review and concern! Even though many kidney patients follow a lower potassium eating plan there are also many who need to add potassium to their diets. Some are on peritoneal dialysis or home hemodialysis (more frequent dialysis = more potassium removal and more liberal diet) and some are in earlier stages of CKD and have no problems with high potassium levels. The potassium content per muffin is 247 mg. As noted in the helpful hints the recipe is a good choice for those who are not on a low potassium plan, but could still be worked into a lower potassium plan.
