Can molasses be use instead of dark corn syrup? Dietitian comment: The potassium content of molasses is higher. If potassium is a problem I would not make this change.

Cutting this recipe in half would make more sense to avoid over eating, also why not use pure maple syrup instead of the corn syrup? Does having that much ginger have a nutritional value? Dietitian comment: You could cut the recipe in half, but a better alternative is to freeze half the muffins for later quick snack or dessert. Maple syrup can be substituted for corn syrup but be aware the potassium is higher (1/4 cup = 170 mg potassium). The ginger is added into the total nutrient values.

I made this but forgot to add the sugar in because it wasn't listed in the preparation directions. It was a bad batch. =( So I will give it 3 stars because I made it wrong. Haha Dietitian content: Oops--our mistake. Thanks for letting us know. The recipe has been updated.
